Also give them a fairly severe pruning. I would cut off everything thinner than about 7 mm thick, maybe thicker on the pear. Also thin out a little to keep next year's growth from being too congested. This is mainly to keep the tree from drying out before it roots.

Not a good time. Better in winter when dormant, if you have to move them. If it is imperative that they are moved now then take as big a root ball as you can and keep them well watered. They will probably not fruit very well, if at all, this year.
