I have a fig palm which was damaged during our frosty weather and I have taken off the brown leaf growth and left a stump - will it recover and re-grow?

If you mean Fatsia japonica (which is sometimes commonly called Fig Palm, though not often, it has to be said), then it might. I'm surprised if it suffered that much damage that it needed to be cut back so far, though. The two I care for have been nipped at the tops, particularly the flowers, and I have had to remove all soggy areas, but have left the main cut back till mid May, when I usually do it. I'm afraid you'll just have to wait and see. At least they're not too pricey if you need to replace, and relatively quick growing.
