Is it possible to save an Escalonia Shrub about 6 ft high after a really hard and frosty winter. It has lost all its leaves and looks dead.

Have you done the 'scratch' test on it? That means scraping a small piece of bark off the trunk and seeing if the wood underneath is brown or greenish. If it's brown in several places, then I'm afraid you have an 'ex' Escallonia. If its still alive, try a hard prune as they do regenerate. Then feed it with blood, fish and bone scattered round where the roots are.
