I have some Echiums growing indoors in pots but they seem to be turning red the stems and the leaves, are they dying as I had one indoors a couple of years ago and it didn't do this, also do you think it is safe to plant them outside now or is it still to early?

You could stand them outside in a sheltered spot on mild days, but bring them in overnight. You will need to do this before you plant them out to 'harden' them off. mid May is the time to plant them out.
