if i plant an acer palmatum in a pot, should i use ericaceous compost?

no you dont need to .

But you can if you want - Acers don't like alkaline, chalky conditions, but are perfectly happy in neutral soil, so it rather depends on the contents of the compost as to how happy or not it will be. Most potting composts (apart from special ones like ericaceous) should be neutral ph.

More important is to plant it in a big enough pot.
