Slow growing, the Medlar (Mespilus) is a relative of the pear, and resents being transplanted. Your trees are obviously suffering from transplant shock, aggravated by the loosening of the roots. Sometimes it is necessary to ignore the normal horticultural rules of thumb. All you can do is shelter them from strong winds, provide shelter and support if necessary, and wait. Do not feed, or allow the soil to dry out.
