Last year I used a very strong weed killer (possibly Paraquat?) to help clear an old vegetable patch that had acquired lots of thistles and bindweed, etc. It said not to grow anything for six months, but now quite a few potatoes have come up - obviously the ones I missed! I've dug up enough for a meal for two, but I'm worried whether they're safe to eat! I would be very grateful for some advice. Many thanks.

I'd be binning anything that grew during the six month period... you don't know what toxins there are in them

If those potatoes have grown within the six month "don't grow anything" time span, I wouldn't be eating them.
