We have 2 dead salix caprea trees, our soil is clay and prone to water log. Do we try again with another salix caprea or try something else? Should we dig it out to see if there are any problems with the soil?

I can see you live in the UK, but no idea where, so its difficult to comment, but if the soil gets waterlogged, is it possible it froze solid last winter for any length of time? If so, that may have been the cause of death. And how waterlogged is waterlogged? Is it wet all the time, regardless of the weather, actually under 3 inches of water all the time, or just occasionally? And which Salix caprea - Kilmarnock or actual Salix caprea (goat willow)?
