my apple and pear trees have long leaders on the branches, do I cut them off or leave until the fruit has been picked?

I would wait until the winter when the tree is dormant and do any pruning then.

I would prune established apple and pear trees now. I would cut the new growth by half on spur fruiting varieties as the energy of the tree in going into new wood which you will discard in the winter. Will also encourage more spurs and more fruit next year.
