Why are the new potato,s i have just dug up bursting when i cook them?

Variety makes a big difference as well.You may find they need slightly less cooking - keep your eye on them and you should be able to take them off the heat when done but not disintegrating. Next year choose a variety that the label says is waxy or creamy. Casablanca for eg.
