I have some lupins in pots that are starting to die off, do I cut the longest stems off and try to use the seeds, whilst letting the rest of the shots grow or do I leave the stems on?

I would remove the heads which have flowered all the way to the top, because this will allow the secondary growth which should have already appeared to achieve maximum growth. Its the same effect as dead-heading roses. If you are keen to have some seeds, I would suggest removing all the primary stems except one and leaving that to reach full maturity until you can collect the seeds.
