Ihave just cut down a row of 12 privet bushes as they were starting to grow
too tall. Now I'm left with what shrubs to plant in the metre wide row that
won't mind the roots that have been left?

Nothing else will grow where the roots are, privet is a gross feeder and will have completely depleted the soil. You will either need to remove the roots and get a lot of organic matter into the soil or do as Stjohntongue suggests.

Water well and your privet will probably regrow.
