Back in August I bought two small olive trees, they are about 10 inches in height at the moment, and I could really do with some advice about how to care for them in the Winter. I am hoping to grow them on and plant them into bigger pots as they need it. I do love olive trees and hope to nurture them on for years to come....

Ah thank you for that I will follow your advice and go for the coldframe until they are a bit more mature and then the horticultural fleece :)
Best wishes and happy gardening x

Previous question
Here in the south they seem to survive the winter very well. I have had two in pots for about 10 years and no longer protect them but in the first few years I either moved them into the coldframe or, as they got taller, wrapped them loosely, pot and all, in horticultural fleece. They might have survived without but I decided to play safe. Now I just move them right under the most sheltered and sunny wall of the house in winter.
