I have a 4 - 5m high Cordyline Australis with 5 seperate trunks, after this winter three had rotten leaves which I have taken off, other two are okay but I notice new shoots coming out of all trunks, do I cut down trunks with no leaves on and what will grow from new shoots

Those new shoots will grow on in a similar way to the existing main plant - fine to saw down any leafless trunks, back to the new growth. If you have too many plantlets sprouting you can remove some.
