No worries as it seems to be doing what rhubarb does. It will grow into long stalks quite quickly. If this is its first year do not use the crop but leave it to bulk up. In the future you can cover some of it to keep out the light and force it in to production early. If it is an older plant start harvesting the stalks as soon as they are big enough and it will continue to crop. If you want to make jam then allow the stalks to grow tall and thick and cut them in August. Either the new or old stalks can be prepared for cooking (cut in to short lengths) and frozen in plastic bags. You could also make puddings with them and freeze those.

Just an afterthought, if you do force some next year you should then give it a years rest without cropping it again to give it time to recover. So if you want to force its best to have at least two crowns.
