I have taken a climbing hydrangea down as it was far too vigorous for the space, I'm trying to dig the roots out without much success, is there anything else I can do?

Yes. Expose the woody roots, drill small pits into them, or make lots of cuts, and apply SBK (brushwood killer, use it neat) to the holes/cuts, preferably without getting it anywhere else. Cover with something and replace the soil, or, if they're above ground, just cover them. This treatment will kill the roots, but it won't make them disappear any quicker - normal decomposition processes take place after death, and they take their time. Keeping the area damp helps to speed up decomposition.
