Can I take cuttings from my grandmothers cherry tree ? She passed and I was told seven variety of cheery grow on this one beautiful cherry tree

Well you could, but you won't get 7 varieties - each variety will have been grafted onto the main trunk, usually with a different rootstock, before sale, so any cutting taken from a branch will only have one type of cherry on it. Even if you took cuttings from each of the 7 different parts, you'd still have to graft onto a stock plant.
