I have a heathy cucumber plant with lots of cuc;s on it, but the problem is the skin on the cuc's are spikey. What is this

They are ridge cucumbers, rub off the spikes and eat the rest.

why is the one cuc plant normal, while the other has spikes.

Where did you get your seeds or plants from?, they are obviously a mixture unless you sowed or planted them at different times.

This is quite natural. They can be easily rubbed off by hand or you can peel them before eating, especially if the peel is thick.
