My rhubarb is in a large tub, but when it's stalks grow they are hollow do I need to put it in the ground

It might need dividing, but the likely cause of the hollow stalks is being restricted in a pot - thin, hollow stalks do sometimes mean the crown needs splitting.

Yes - in theory, you can grow it in a tub that's 24 inches wide by about 18 inches deep, but it does much better in the ground.
