You don't say whether the olive tree is in a pot or in the ground. If you want to limit growth or train it in some way......you could treat it similar to bonzai, and snip as required to keep control, and keep in a smallish pot, so you can overwinter it with some protection. They want to grow quite vigourously and make a substantial tree.....so you may need to be quite bold with pruning.
