Olive trees are evergreen.This means that as soon as you prune them,
new shoots will grow near most of the cuts.Therefore it is important to prune when the mildest months are approaching.Otherwise these new shoots will be too tender to withstand harsh times.This timing does not
apply to deciduous trees (they shed their leaves)
Good pruning is done by examining the structure of the tree.Then one
will decide which branches should go and which should stay.The end result must be 4 or 5 equally distant main branches.The tree should be
without branches in the middle,so that the sun reaches in there.
Vertical branches are less productive than angular or horizontal wood.
