My son has let the goat out and he has stripped the leaves off my two lovely red acers that I have had for 5 years and were stunning! Will they come back and will I have to prune them back at all, if so when should I do this.

Leave it be and it should have enough energy to come back next year.

i'd leave it alone and it will recover to some extent.
Prune it only if you need to improve the shape of the acer after it had been nibbled by the goat.

It might surprise you with a growth of leaves this year. Bonsai artists sometimes defoliate their plants about this time of year to encourage dense branching, and reduced leaf size.
