Can anyone please tell me the best method of harvesting, drying and storing onions/shallots ?

Once you are satisfied the onions/shallots are the size you want them to be bend the tops over sideways and leave for about a week. Then lift on a sunny day and let sit on top of the soil for a few days to dry the skin off, if it is damp then take under cover somewhere cool. Hang up in nets and use as needed.
