We planted a Stella Cherry Tree in our communal London garden 5 years ago and the fruit is Golden Yellow both the flesh and the skin, do you know why this is and is the fruit safe to eat?

Stella, as you probably know, should have dark red fruit, so you've obviously been sold a different variety - they're probably edible, if you're sure its a cherry tree at all, even bird cherry is edible, though not particularly palatable.
