Last night I neglected to protect my Dahlia plants and due to frost they have turned dark green and floppy. Should I prune the affected leaves or just hope the plant recovers?

I'd leave them for now, though it certainly doesn't sound very hopeful. If and when they are obviously dead you can remove them. Lets hope they recover! There's always the chance that the tubers will send out some more shoots later if you take them back into a frost free place for a while.
