I have got a couple of raised veg beds that will be finished for this year soon I am thinking of covering them for the winter with some spare weed guard membrane that have left over to protect them from weeds etc would this be ok?.

You could do that Steve but it would be better to put some mulch on them. This could be well rotted manure, compost or even cardboard. This will help to keep the weeds down but will also get taken down into the ground over winter by the worms and help to feed the soil.
