I have a self pollinating cherry tree and a new spur has grown up away from the tree. Will this new spur be self pollinating too? because I would like to crop the old one down. Thank you

If this is a 'shoot' growing from below the ground or below the graft then you need to remove. Even if it isn't it is unlikely to produce a decent new tree.

Welcome to GoY, Donnyperks!
What do you mean by a "spur"? Do you mean a new branch to the tree, or a shoot from underground, or near the base of the trunk?
