Can anyone identify what is wrong with my 'russet' apple tree leaves? Plus, it has only produced 2 apples this year.

Fairly common complaint of apples.......Scab. One of the Blackspot fungus which affect almost every plant.
There are no sprays available to the amateur for this in Britain, but some people have tried Rose Clear Fungicide. Otherwise if you can get hold of some Copper sulphate you could try that.
Collect up and burn any fallen leaves.
Lack of fruit this year is down to the wrong weather at the wrong time.
