Once upon a time most rural areas would have their own varieties of fruit tree that did best in that location. So, I would suggest that you ask your neighbours what varieties are grown locally which do best in the conditions that you describe.

I agree have a look at what other people grow in your area. For it to take up water there needs to be leaves on the branches through the winter otherwise it will just be sitting in water and that isn't usually a good thing for most plants.

As I remember the weather in southern Spain, yes you have drenching rains which come to a rather sudden stop and then soon after very hot and dry. You do need to look at what is successfully growing in your area that can take those bipolar soil conditions of wet soft ground in the winter to hard concrete like in the summer.

I wouldn't be surprised if there are a lot of níspero (loquat) trees around there. They flower in the fall and the fruit grows all winter long to ripen in the spring when the rains start to decrease. At least that is how mine are in the Açores. Of course I have well drained volcanic soil, but the ground is soaked in the winter and very dry in the summer.
