Bought 3 carnation "plants" at the Southport flower show, basically 3 cuttings in small pots. I was advised to pot them on, which I have done, and over winter them for next year. My question is should I nip the tops off to make them bush or just leave the single stem to grow? Thanks in advance.

I took cuttings from a bunch of Supermarket Carnations last year, and they are looking lovely,so yes, take cuttings for next year.. Mine overwintered in a cold Conservatory,so they should survive ok..

If the nipped out pieces are long enough then use them as cuttings.

Certainly, pinch the growing tips out (just above a leaf axle) to make them nice and bushey. Next year when they are growing well perhaps take some cuttings yourself.
