how far do mature laurel roots spread
If you mean Aucuba japonica, (Spotted laurel) not too far, so not a problem to foundations, etc. If, though, you mean Cherry Laurel (Prunus laurocerasus), if its been left to get to 25 feet, then the roots on that will be much more extensive.
