Planted a Butternut Squash seed & hey presto a plant has grown ,about 3” high . BUT do I pot it up into a big pot & train it to ‘climb ‘ or let it trail on the ground

personally I'd leave it to scramble over the ground. Don't pot on until it has at least 2 true leaves though. Done it too soon before and they have died off.
