I have found behind my shed a bag of well rotted manure, which I would like to put under my Rhubarb plants. However they have now started sprouting so I think if I disturb them I will do more harm than good. Is this correct?

just spread the manure around the crown. The worms will work it in and the rain will wash the nutrients down too.
No need to lift the crown even when dormant. I just top dress my rhubarb every year.
