It depends whether you mean the herbaceous ones like S. nemorosa, or the shrubby ones, Guest. If it's the herbaceous ones, you can cut them back to the base when they've completely finished flowering.
If it's the shrubby ones ('Hot Lips' etc)then leave them alone until spring, when you can give them a gentle trim.
