what are the most popular evergreen trees for gardens

I don't know about popular, but one of the best is Nandina. It is evergreen, and the leaves change to shades of red and bronze randomly through the year. (It also has red berries and small white flowers, but is generally grown for its attractive leaves.) Can grow to about 5 - 6 feet in sun; less in shade.

Camellia, rhododendron, holly, euonymus, though lots of these are kept small to fit modern gardens.
You'd have to ask the owner of a large nursery, or chain of nurseries which are the best evergreen sellers, otherwise you just get a list of one person's favourites.
