I HAVE SEVERAL VIBURNUM AND RHODEDENDRON SHRUBS WHICH HAVE BEEN ALLOWED TO OVERGROW AND ARE IN NEED OF SHAPING, AND PRUNING. EVEN THOUGH NOVEMBER IS NOT CONSIDERED THE RIGHT TIME TO DO THIS, WOULD I BE CAUSING ANY DAMAGE IF I WRER TO DO SO?

Well yes, because you'd lose all the flowers! Wait a while and then do it after they've flowered, unless you don't mind being 'flower-less'.
