I have several mature phormium plants in my garden which are looking very poorly after the snow.
Should I just leave them alone and hope they recover or is there something I should be doing with them?

No, leave them alone - wait till mid spring before deciding whether they're dead or alive, or whether you need to cut back some or all of the plant.
