I have a lot of pyracanthas and one in particular has lost all its leaves and looks quite poorly. I am hoping that it was down to the really bad winter .Should I wait to see if it picks up or dig it up.Would I be able to put another in its place.

I would wait a while yet, you can always cut it back a bit if it is very untidy. Chances are that it will not recover to anything like it's former glory. Way not take the opportunity for a change.
