is it okay to eat rhurbarb in its first year

Not really - you should leave the stalks in place the first year to let the crown/roots grow larger, and start cropping next year. However, if you have masses of stalks, you can take a few, but make sure it's less than a third, and only if there are masses.

And don't take more than one stalk from each growing centre - a good rule at any time. But its better to wait until next year if you can contain yourself as pulling the stems weakens the plants.
