I have jasmine growing up my fence it has come down with all the trellis. We need to take the jasmine off in order to put the trellis back up but is proving to very difficult! will i kill it if i cut it right down?

Very unlikely - all jasmines seem to respond well to hardy pruning/renovation. It may be two or three years before it flowers again though.
