I'm growing cucumbers for the first time this year, and right now they are in pots in the greenhouse, but I need them watered when I'm away so will it be safe to put them outside

it depends on the variety are they indoor cues or outdoor cues. they do like a lot of water, but would be more concerned with the winds we have been having.
If its only a few days water well just before you go and fingers crossed if longer I would try to get someone to take it in for the time you are away or pop in every other day to water.
I am surprise they are in a pot my one has grown to the top of the green house and growing like mad. we had two good size cues and there are others on the way.
