Are the thick central stems of Leeks which bear seed heads safe to eat.?

Yes you can eat them but as Cammomile says they are woody so will need a longer cooking time.

Don't think they're worth it. I'd take them out and compost them.

Yes, I presume they taste oniony, but why would you want to? They would be a bit tough I think.
