Attempting to grow beefeater type tomatoes they end up disfigured with deep 'crevises', not a bit like the tomatoes illustrated on the packets. I grow normal types very successfully. What am I doing incorrectly?

You haven't said which variety you're trying - Marmande types are deeply crevassed, and are the only beefsteak tomato which you can grow outside here, and which should be grown outside and not in a greenhouse. The other two groups are Dombito and Big Boy - these need greenhouse culture and are not deeply crevassed, though they do have some.
