Giant Sunflower - Colour of seeds

I have grown 4 giant sunflowers, all of a decent height, flower heads ranging from large plate size to medium, very nice.
I have been waiting for the seeds to turn from black to black/white until I chop and hang dry them. The plants look almost dead, all flowers fallen off etc. However, the seeds are still black. Do they take longer to change or are they a certain type of black seed that doesnt change?
Any advice please would be amazing

Thanks for your response. So I guess the birds will be eating them and not me! Think I will grow a different variety next year...

Thanks, I will give this method a try. It is a shame that the black seeds are only good for bird feed. I'm a big fan of normal black/white sunflowers to eat, so next year a different variety will be grown.

Yes, there certainly is. I buy it by the sackful for the bird feeders. Finches particularly love them.
