Are the leaves of artichoke plants safe to eat?

My artichoke plant bore it's fruit last year, survived very well over the winter and is three times the size it was last year with no sign of more artichokes coming. the leaves however are giant. I discovered broccoli leaves are really tasty. Are these leaves edible too?

My honey is Italian, and he only eats the tips of the leaf of each "petal". When I asked him, he said yes, you can eat the whole plant, people just don't because the rest of the plant is too tough. That's why it is cured (softened0 and then placed in salads :)

And yes, all of broccoli is edible. I love the leaves in salads :)
