we have a cordoline which is about 5 ft tall and now appears to have a second one shooting out the side. What do we do with the new growth?

If you mean the new growth is appearing from the trunk part way up from the ground, they do this - it'll just form another branch. If you mean it's arising from the base, you can just leave it to grow on, or, if you don't want growth at the base, cut it off. The only way you can transplant any new growth is if you can get some good root with it - often hard to do without damaging the parent plant.
