Are you certain its Paul's Scarlet? Whenever I've seen it, it always has pinky red blossom right from the start. Does yours produce deep red berries in the autumn?

As your hawthorn is double it could be sterile, also the stock is grown thornless.

Thank you for your advice, it was purchased from a garden center, who told us it was a Paul Scarlet, yet it hasn't produced berries in the autumn. Does this mean it will never produce berries or will I have to wait a bit longer?

Doesn't Paul's Scarlet have red flowers? I would take a spray of flowers to the GC and ask them to identify the variety for you, and also ask them if it is indeed sterile, as if it is you will never get berries.

That's why I'm asking - Paul's Scarlet should be thorny (see descriptions on the web from various suppliers), should have deep pinky red flowers right from the start, and should produce deep red berries in autumn. Admittedly, whether the berries are produced or not is dependent on other environmental factors year on year, but I'm beginning to wonder if what you've got there isn't Paul's Scarlet - or possibly even some other tree rather than Crataegus, given the absence of haws.
Mislabelling at garden centres certainly isn't uncommon.
