Probably is too late to hard prune the fig, assuming you mean an outdoor fruiting one - should have been done whilst dormant in winter.
The Sambucus you mention will get very tall indeed if you don't prune it regularly - they're better pruned anyway, otherwise they make a rather gawky, leggy looking plant. Seems to grow almost anywhere, but for good leaf colour, at least half a day's sun is needed.
