I am growing Rhubarb this year for the firdt time - I am surprised it seems to be growing "a head" in the centre which looks simislar to cauliflower ! Please can you advise/help, as I'm not sure what to do or if it is bad for the plant.

Hi this is a flower. pull it off and any others that grow.
As this is the first year for the plant resist eating any if you can if you have to have some [and I would have to :o)] only take a 1/3 of the stems.
every year I remove the flowers as this encourages new stems.
