Any advice on taking cuttings from an 8 foot high bamboo clump?

I wouldn't take cuttings, I'd dig out a clump and move it where I wanted it!

the running roots on bamboo are quite near the surface making it fairly easy to dig out a clump. Cuttings would take forever, not that i've tried.
